These are two recipes from a new-ish cookbook that I got as a white elephant gift at Christmas time. It's called Dollars to Donuts: Comfort Food and Kitchen Wisdom from Route 66's Landmark Rock Cafe by Dawn Welch with Rachel Pelzel.

As the title hints, for someone trying to be healthy, I have to do quite a bit of scouring of the contents to find something I can cook and eat in good conscience, but I've found a few things I'll be trying in the future. On top is Bare Cupboard Lentil Soup and at the bottom was my first attempt at an omelette. It's an Omelette with Basil, Feta, and Spinach, and it is/ was delicious!

Although there's NO WAY I would eat this for breakfast, it's quite delectable after, say, 5 PM.
