Marathon Week

So the week of the marathon is also known as "Carb-crazy" week at the Stutzman house. The first two of these recipes are diabetic-friendly and from Runner's World, and they actually turned out to be pretty good.

Veracruz Shrimp Tacos

Chicken and Veggies with Brown Rice

Shrimp and Spinach Pasta

Caesar Salmon Pizzas- The first pic is right before they go in the oven, to show that these are personal-size, (unless you're a big eater like me...)

Shanghai Pasta

These are two recipes from a new-ish cookbook that I got as a white elephant gift at Christmas time. It's called Dollars to Donuts: Comfort Food and Kitchen Wisdom from Route 66's Landmark Rock Cafe by Dawn Welch with Rachel Pelzel.

As the title hints, for someone trying to be healthy, I have to do quite a bit of scouring of the contents to find something I can cook and eat in good conscience, but I've found a few things I'll be trying in the future. On top is Bare Cupboard Lentil Soup and at the bottom was my first attempt at an omelette. It's an Omelette with Basil, Feta, and Spinach, and it is/ was delicious!

Slow Cooker Sausage and Potato Salad

Cubed Steaks with Tomato Mushroom Sauce

Breakfast Burritos
Although there's NO WAY I would eat this for breakfast, it's quite delectable after, say, 5 PM.

Steamed Fish and Asparagus with Dill Sauce

What a horrible photo! Just trust me. It's good.

Tilapia Pitas
Try saying that five times quickly.
